1.5KG VERY RIPE TO ‘GLASSY” BANANAS
½ KG WHITE SUGAR
1 TABLESPOON BUTTER
VANILLA POD OR ESSENCE
MASH THE BANANAS WELL.
PLACE THE SUGAR INTO A POT AND MELT UNTIL GOLDEN. DO NOT ALLOW TO GO BROWN AS THEN THE MARMALADE WILL BE BITTER.
PLACE MASHED BANANAS AND VANILLA INTO THE SUGAR STIRRING VIGOROUSLY. IF THE MIXTURE IS TOO THICK TO COOK ADD A LITTLE WATER.
COOK UNTIL MARMALADE IS THICK THEN REMOVE FROM STOVE AND IMMEDIATELY ADD TE BUTTER.
ONCE COLD STORE IN REFRIGERATOR.
DELLICIOUS ON TOAST, ICE CREAM OR IN TARTS TOPPED WITH CREAM.

i USUALLY TRY TO GET OVER RIPE BANANAS AT YOUR STORE. i LOVE TO SHOP THERE YOUR STAFF ARE SO HELPFUL. WHEN I TOLD THEM I MAKE JAM FROM THE BANANAS THEY ALL WANT THE RECIPE. i THOUGHT MAYBE YOU COULD CHALK IT ONTO A BOARD ABOVE THE BANANAS FOR EVERY ONE TO COPY?
